Refreshing and easy to make low carb zucchini casserole that even the kids will eat. If you are busy and it's one of those days when you don't have time to cook, make this delicious and easy zucchini recipe. Low carbs and healthy to please your family with just a few ingredients.
Low Carb Zucchini Casserole
Ingredients
3 Zucchinis cut in round pieces
3 1/5 can of organic tomato sauce (I prefer Marinara)
Garlic Powder to taste
Salt and Pepper to taste
1 cup Mozzarella cheese
1/2 a cup Parmesan Cheese (You can add more if you'd like too)
Canola or Olive Oil
Instructions
Marinate Zucchini slices with garlic powder, salt and pepper until they are evenly coated.
Arrange Zucchini slices in a casserole dish in sequence one slightly on top of the other (make sure you grease the casserole dish with canola oil or olive oil)
Add tomato sauce making sure all the slices are covered with the sauce. Add Mozzarella Cheese on top and Parmesan cheese last.
Bake in the oven for 20 minutes at 450*.
This recipe goes well with chicken parmesan or grilled chicken. Dinner rolls are great with it!
